Brown rice veg bowl w/ kimchi

Serves two. Has a preparation time of around thirty minutes.

julienne or shave one carrot   /   slice one ripe avocado   /   floret half a broccoli head   /   half mug of organic kimchi or pickled turnip   /   tear half mug of dried nori seaweed   /   tbsp sesame seeds   /   one mug brown rice   /   one tbsp sesame oil   /   two tsp minced ginger   /   one tsp minced garlic   /   one tbsp white or rice wine vinegar   /   one tbsp tamari soy sauce   /   one tsp date syrup     

 

+ Boil a pan of slightly salted water. Add the rice and simmer for twenty to twenty-five minutes, then drain and rinse in cold water.

+ Meanwhile, bring another pan of water to the boil. Add broccoli for one minute, remove and rinse in cold/iced water.

+ Combine sesame oil, ginger, garlic, white wine vinegar, tamari and date syrup — whisk well.

+ Build the ingredients into your bowl, drizzle with dressing and sprinkle over sesame seeds.
