Papaya salad

Serves two. Has a preparation time of around twenty minutes.

 

Tart + fiery salad. Powerful antioxidant.

 

peel, deseed + shave one green papaya   /   shave two carrots (skin on)   /   slice ten cherry tomatoes   /   fine slice five spring onions   /   chop quarter bunch of coriander   /   fine slice two small red chillies (deseeded if preferred)   /   mince three cloves of garlic   /   quarter mug of peanuts   /   two tbsp fish sauce   /   juice three limes   /   two tsp date syrup

 

+ Heat a small dry pan, add the peanuts and toast until lightly charred, then chop.

+ Combine papaya, carrots, tomatoes and coriander in a large bowl.

+ Mix together the dressing of lime juice, fish sauce, garlic, date syrup and chilli.

+ Add dressing to raw salad and toss to coat.

+ Serve topped with toasted peanuts.
