The simplest condiment, full of Vitamin C + Iron.
one small tub natural, unsweetened, yoghurt / fine chop one quarter cucumber / peel and rough chop two beets / fine chop mint to taste / quarter mug organic dried coconut / pinch sea salt / a squeeze of fresh lemon
+ Blitz beets, yoghurt and salt in a processor, until smooth.
+ Add the beetroot mix to the remaining ingredients, combine and serve.
