Steamed coconut pancake – ela ada

Serves four. Ready in around twenty minutes.

Refined sugar-free

 

Soft + sweet pudding. Rich in manganese + potassium.

 

half a mug of rice flour   /   quarter tsp cardamom powder   /   pinch of cinnamon powder   /   half a tsp sea of salt   /   half a mug of organic dried coconut   /   rough chop and soak half a mug of dates   /   two tbsp flaked almonds   /   quarter mug organic coconut milk

 

+ Heat coconut milk and dates in a pan to a simmer. Cook for ten minutes, until dates are soft. 

+ Allow milk and dates to cool, then blitz to a paste in a food processor. Mix in coconut, almonds and cardamom.

+ Combine flour, a pinch of salt and enough water to make a firm dough.

+ Lay out a piece of cling film or baking parchment, then roll a lemon-sized piece of dough and place it in the middle of the parchment/film.

+ Flatten the dough with the palm of your hand and fingers, until it’s around half a cm thick.

+ Spread the coconut and dates over the top of the dough, fold the cling or paper over the top and then steam for approx 10 minutes over a pan of water.
