Date + coconut bites

Fifteen servings. Takes around thirty minutes.



Refined sugar-free

Raw, energy-dense, packed with antioxidants.


fifteen pitted dates   /   half a mug of dried coconut   /  one mug of ground almonds   /   chop four tbsp raw, skinned, peanuts   /   five tbsp virgin coconut oil


+ Heat one mug of water in a saucepan until boiling. Reduce to a simmer and add the dates. Cook for twenty minutes, until soft.

+ Combine all dry ingredients in a bowl.

+ Once softened, strain the dates but reserve the cooking water.

+ Heat the coconut oil in a pan until liquid.

+ Add the coconut oil and soaked dates to the dry ingredients and mix well with your hands.

+ Now slowly add the date water and work the soaked dates into the mixture. It’s a malleable, cookie dough, consistency that you need. Add more or less water, as needed.

+ Roll into fifty pence sized balls and spread on a tray.

+ Enjoy whilst still warm and then chill in the fridge. Can be frozen.
