Rice pudding w/ almonds

Serves two. Has a cook time of around twenty minutes.

Gluten-free

Wholesome and warming. An excellent source of Manganese + Magnesium.

 

half mug short-grain rice   /   two tbsp dried coconut   /   chop ten raw almonds   /   chop a small handful of sultanas   /   one can of organic coconut milk   /   half a tsp of cinnamon   /   a pinch of ginger powder

 

+ Bring a saucepan of water to boil, add rice and simmer for ten minutes before draining. Rinse with boiled water.

+ Heat coconut milk in a saucepan.

+ Add the rice and all other ingredients. Simmer for ten to twenty minutes, adding water if needed, until the rice is swollen. Serve warm.
